Butternut Squash

butternut The other evening, I had a knock on my door.  It was Carolers (yes they were singing carols in September!)  It was the 3 Wonderful Neighbor ladies.  The tune was We Three Kings, but they were singing about 3 Queens.  🙂  They brought me gifts from a far.  Not too far, just out of their garden.  They had a whole wagon load of bounty for me to have or choose from.  There were 3 butternut squash and I took all 3, since they said they had more for themselves.  I should have gotten a picture of them with their wagon load of goodies.  I am truly blessed by my neighbors. 

I decided to try and cook the squash in a different way.  I washed the outside all off and put it in my crockpot whole.  I did stab it a couple of times with a sharp knife.  I then added about 1/2 inch of water to the bottom of the crock pot.  I put the lid on and cooked it on high for about 1.5 hours.  I poked it with a meat fork to check it and it appeared to be soft.  I took it out and cut it in half.  It cut like a dream.  There was no sawing the hard raw squash.  I scooped the seeds out and they came out so much easier than when the squash is raw.  I then scooped the meat of the squash out and we had some with our supper that night.  I put the left overs in the fridge.

Today, while deciding what flavor of smoothie to try, I saw the bowl of squash.  You can substitute butternut squash for pumpkin in almost any recipe, so I made a butternut smoothie and it was DELICIOUS!!  🙂  I have recipes for 2 versions of the Pumpkin Smoothie here and the THM one here.   Just substitute butternut for pumpkin.
